Orange Ginger Glazed Carrots

Ingredients:

  • 1 tablespoon butter or margerine
  • 2 cloves of garlic, minced
  • 1 tablespoon orange ginger seasoning
  • 1 tablespoon honey
  • 1/2 cup water
  • 4 carrots, peeled and sliced thinly on a diagonal
  • 1 yellow pepper, seeds remvoed, and roughly chopped
  • 2 cremelini mushrooms, washed and sliced
  • 2 cups baby spinach

Directions:

  1. Place carrots, mushrooms and yellow pepper in a frying pan.
  2. Cover with the water and bring to a boil.
  3. Cook for 10 minutes over medium heat. Water will boil off, and carrots will feel tender when poked with afork.
  4. Add the garlic, and stir to combine.
  5. Add the butter and the orange ginger seasoning blend, stirring until seasoning blend is well incorporated into the vegetable mixture. 
  6. Cook, stirring frequently, for an additional 5 minutes.
  7. Serve.
