Ingredients:
- 1 tablespoon butter or margerine
- 2 cloves of garlic, minced
- 1 tablespoon orange ginger seasoning
- 1 tablespoon honey
- 1/2 cup water
- 4 carrots, peeled and sliced thinly on a diagonal
- 1 yellow pepper, seeds remvoed, and roughly chopped
- 2 cremelini mushrooms, washed and sliced
- 2 cups baby spinach
Directions:
- Place carrots, mushrooms and yellow pepper in a frying pan.
- Cover with the water and bring to a boil.
- Cook for 10 minutes over medium heat. Water will boil off, and carrots will feel tender when poked with afork.
- Add the garlic, and stir to combine.
- Add the butter and the orange ginger seasoning blend, stirring until seasoning blend is well incorporated into the vegetable mixture.
- Cook, stirring frequently, for an additional 5 minutes.
- Serve.
