Ingredients:
- 4 eggs
- 1 onion
- 1/2 green pepper
- 1 red pepper
- 2 cups spinach
- 4 slices gluten free deli style ham
- 1/4 cup shredded cheddar cheese
- 1 tsp paprika
- 1/4 tsp salt
- 1/4 tsp pepper
- 1/4 cup chives
- 1 tablespoon
Instructions:
- Chop the onion, peppers, spinach and ham and set aside.
- Heat the olive oil in a medium sized frying pan
- Add the onions and peppers, and stir fry until they have softened, about 5 minutes.
- Add the ham and spinach and cook until the spinach has wilted.
- Crack the eggs in a small bowl, add the salt, pepper and paprika and whisk until combined.
- Add egg mixture to the frying pan, stirring well to incorporate the vegetables throughout.
- Mix in the cheese.
- Stir the mixture continuously until the eggs are cooked and the cheese has melted. Just another minute or two.
- Remove from the heat and garnish with fresh chopped chives.
- Serve with side of gluten free toast if desired.
