Gluten Free Banana Bread

Ingredients:
½ cup butter
1 cup sugar
2 eggs
1 tsp pure vanilla extract
3 bananas
¼ cup millet flour
¼ cup chickpea flour
½ cup white rice flour
¼ cup tapioca starch
¾ tsp xanthan gum
1 tsp baking soda
¼ tsp salt

Directions:

Preheat the oven to 350 degrees.  Cream together the butter and sugar.  Add eggs and vanilla and whisk until smooth.  Add bananas and mash into the mixture.  Add the remainder of the ingredients and stir until the batter is smooth.  Pour batter in to a bread pan.  Bake for 65 minutes.  Allow bread to cool in the pan for 10 minutes before removing to cool on a wire rack.
