Asparagus & Mandarin Salad

Ingredients:

Salad
1 ½ cups steamed asparagus, cooled and cut into 1 inch pieces
2 ½ cups mixed greens
2 mandarin oranges, peeled and separated into segments (or 2 mandarin orange fruit cups, drained)
¼ cup chopped almonds

Dressing:
3 TBSP apple cider vinegar
Juice of 1 mandarin orange
1 TBSP sugar
½ tsp fresh, minced ginger
¼ cup olive oil

Directions:
1.  Prepare the dressing by placing the apple cider vinegar, juice of mandarin orange, sugar, and ginger in a food processor. 
2.  Process on high for approximately 30 seconds. 
3.  Slowly add the olive oil through the top while processing. 
4.  Process for an additional 30 seconds.
5.  In a separate, medium sized bowl, toss together the asparagus, mixed greens, and oranges.
6.  Add the dressing, tossing until everything is well coated.
7.  Sprinkle almonds over the top, and serve!
