Apple Crisp With Quinoa

Ingredients:

  • 7 cups apples, peeled, cored, and chopped
  • 1 tablespoon white sugar
  • 3 teaspoon ground cinnamon, divided
  • 2 tablespoons lemon juice
  • 1 cup cooked quinoa
  • 1 cup gluten free oats
  • 3/4 cup brown sugar
  • 3 tablespoons butter or margerine

Directions:

  1. Preheat the oven to 350 degrees Farenheit
  2. Place the chopped apples, white sugar, 1 teaspoon of the cinnamon, and the lemon juice in a casserole dish
  3. MIx the ingredients together until the cinnamon is covering the apples
  4. In a separate bowl, combine the remainder of the ingredients, cutting in the butter/margerine until the mixture resembles crumbs
  5. Sprinkle this mixture evenly over the apples
  6. Bake for 30-40 minutes, or until the apple feels tender when pierced with a fork
