Chocolate Cranberry Energy Bites

Ingredients:

  • 1 cup gluten free quick quick oats
  • 1/2 cup shredded coconut, unsweetened
  • 1/2 cup sweetened dried cranberries
  • 2 TBSP cocoa powder
  • 1 tablespoon chia seeds
  • 1/2 cup peanut butter (or nut / seed butter of your choice)
  • 1/3 cup honey
  • 1/4 cup powdered sugar (optional)

Directions:

1.  In a medium size bowl, stir together the peanut butter, honey and cocoa powder.
2.  Stir in the oats, chia seeds, and coconut until well combined.
3.  Fold in the cra,nberries.
4.  Shape the mixture into 12 balls
5.  Roll the balls in powdered sugar if you desire a sweeter energy bite

Store these energy bites in the refrigerator for up to 5 days.
