Simple Side Salad For One

Getting your greens is important, but if you’re eating alone it can be less motivating to cook for yourself. This simple salad is quick to make, only uses a few ingredients and is a great side dish for any protein.

Ingredients:

  • 1/4 of a cucumber, chopped
  • 1/8 of a red onion, sliced
  • 1/2 cup of cherry tomatoes, halved
  • 2 TBSP of crumbled feta cheese (omit if you want a vegan or dairy free version, or use your favorite dairy free feta substitute)
  • 1 1/2 cups of mixed greens
  • 1 tsp of olive oil
  • 1 tsp of balsamic vinegar
  • Juice of half a lemon

Directions:

  1. Chop the cucumber, red onion, and cherry tomatoes into your desired size. Place in a bowl.
  2. Add the mixed greens to the bowl.
  3. In a separate container, mix the olive oil, lemon juice, and balsamic vinegar until well combined.
  4. Pour this mixture over the salad and toss until everything is coated in the mixture.
  5. Sprinkle the feta cheese on top. Skip this step to make the salad vegan or dairy free.
  6. Enjoy!
