Getting your greens is important, but if you’re eating alone it can be less motivating to cook for yourself. This simple salad is quick to make, only uses a few ingredients and is a great side dish for any protein.
Ingredients:
- 1/4 of a cucumber, chopped
- 1/8 of a red onion, sliced
- 1/2 cup of cherry tomatoes, halved
- 2 TBSP of crumbled feta cheese (omit if you want a vegan or dairy free version, or use your favorite dairy free feta substitute)
- 1 1/2 cups of mixed greens
- 1 tsp of olive oil
- 1 tsp of balsamic vinegar
- Juice of half a lemon
Directions:
- Chop the cucumber, red onion, and cherry tomatoes into your desired size. Place in a bowl.
- Add the mixed greens to the bowl.
- In a separate container, mix the olive oil, lemon juice, and balsamic vinegar until well combined.
- Pour this mixture over the salad and toss until everything is coated in the mixture.
- Sprinkle the feta cheese on top. Skip this step to make the salad vegan or dairy free.
- Enjoy!
