This recipe makes 12 cookies. If you want more, just double the quantities of each ingredient. They are soft, chewy and delicious!
Ingredients:
- ½ cup peanut butter
- ½ cup brown sugar
- 1 ¼ cups gluten free quick oats
- 1 tablespoon ground flax seeds
- 3 tablespoons water
- ½ teaspoon baking soda
Directions:
- Preheat the oven to 350 degrees farenheit and line a baking sheet with parchment paper
- Mix the ground flax and water together in a small bowl and set aside.
- In a medium bowl, cream the peanut butter and brown sugar together
- Add the flax mixture and stir until well combined
- Add the rest of the ingredients and mix well
- Form the mixture into small balls about the size of a golf ball
- Place them on the pan and flatten into the shape of a cookie
- Bake for 12 minutes
- Allow cookies to cool on the pan for 3 minutes, then move to a wire rack to cool completely before serving
