Oatmeal Peanut Butter Cookies

Oatmeal Peanut Butter Cookies

This recipe makes 12 cookies.  If you want more, just double the quantities of each ingredient.  They are soft, chewy and delicious!

Ingredients:

  • ½ cup peanut butter
  • ½ cup brown sugar
  • 1 ¼ cups gluten free quick oats
  • 1 tablespoon ground flax seeds
  • 3 tablespoons water
  • ½ teaspoon baking soda

Directions:

  1. Preheat the oven to 350 degrees farenheit and line a baking sheet with parchment paper 
  2. Mix the ground flax and water together in a small bowl and set aside. 
  3. In a medium bowl, cream the peanut butter and brown sugar together 
  4. Add the flax mixture and stir until well combined 
  5. Add the rest of the ingredients and mix well 
  6. Form the mixture into small balls about the size of a golf ball 
  7. Place them on the pan and flatten into the shape of a cookie 
  8. Bake for 12 minutes 
  9. Allow cookies to cool on the pan for 3 minutes, then move to a wire rack to cool completely before serving
