Poached Egg Omlette Bites

These poached egg omelette bites make for a great breakfast or brunch option. They’re easy to make and can be customized to suit your taste preferences. Feel free to add in other ingredients like ham, bacon, or other vegetables to make them even more flavorful.

Ingredients:
1 egg
2 TBSP spinach, chopped
1 mushroom, chopped
1 green onion stalk, chopped
1 TBSP cheddar cheese

Directions:

  1. Fill an egg poacher with water and bring it to a boil.
  2. While waiting for the water to boil, combine all the ingredients (eggs and any additional ingredients) in a large glass measuring cup or a bowl that is easy to pour from.
  3. Whisk all the ingredients together until well combined.
  4. Fill two of the poaching cups with the egg mixture.
  5. Cover the poaching cups with their lids.
  6. Carefully place the poaching cups into the boiling water.
  7. Reduce the heat to medium-low and let the eggs poach for about 10 minutes or until cooked to your desired level of doneness.
  8. Once the eggs are cooked, remove the poaching cups from the water using tongs or a slotted spoon.
  9. Gently remove the poached eggs from the cups and serve immediately.
