Egg and Veggie Scramble

Ingredients:

  • 4 eggs
  • 1 onion
  • 1/2 green pepper
  • 1 red pepper
  • 2 cups spinach
  • 4 slices gluten free deli style ham
  • 1/4 cup shredded cheddar cheese
  • 1 tsp paprika
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/4 cup chives
  • 1 tablespoon

Instructions:

  • Chop the onion, peppers, spinach and ham and set aside.
  • Heat the olive oil in a medium sized frying pan
  • Add the onions and peppers, and stir fry until they have softened, about 5 minutes.
  • Add the ham and spinach and cook until the spinach has wilted.
  • Crack the eggs in a small bowl, add the salt, pepper and paprika and whisk until combined.
  • Add egg mixture to the frying pan, stirring well to incorporate the vegetables throughout.
  • Mix in the cheese.
  • Stir the mixture continuously until the eggs are cooked and the cheese has melted. Just another minute or two.
  • Remove from the heat and garnish with fresh chopped chives.
  • Serve with side of gluten free toast if desired.
