If you are looking to add flavor to your protein, try using a marinade.  This recipe for Greek Chicken Skewers combines the heat of red pepper flakes, with the fresh flavors of oregano and basil to create a Mediterranean inspired marinade. Add a Greek salad on the side or this Greek inspired rice and you’ll have a perfect meal! 

Greek Chicken Skewers

Ingredients:

For the Chicken Skewers:

  • 4 boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1/2 large red onion, cut into chunks
  • 2 red peppers, cut into chunks
  • 1 green pepper, cut into chunks
  • 1/4 cup fresh oregano, chopped finely
  • 1/4 cup fresh basil, chopped finely
  • 3 cloves of garlic, minced
  • 1/2 tsp red pepper flakes
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup olive oil
  • 1/8 cup lemon juice
  • 6-8 Wooden skewers, soaked in water for 30 minutes prior to cooking to prevent burning

Instructions:

1. Marinate the Chicken:

  • In a bowl, combine the olive oil, lemon juice, minced garlic, oregano, basil, red pepper flakes, salt, and black pepper.
  • Add the chicken cubes to the marinade, making sure they are evenly coated in the marinade.
  • Cover and refrigerate for at least 2 hours, or overnight for best results.

2. Chop the Vegetables:

  • Chop the red onion and peppers into large pieces, place in a bowl and set aside until you are ready to assemble your skewers.

3. Assemble the Skewers:

  • Thread the marinated chicken pieces and chopped vegetables onto the soaked wooden skewers, alternating between them all (chicken, onion, pepper, chicken, onion, pepper, etc)

4. Heat the Grill:

  • Preheat your grill until the indicator light shows that the grill is ready to use, or heat up your BBQ

5. Grill:

  • Place 3 skewers at a time on your grill (or more if they will fit). Close the lid and grill for 11 minutes.
  • Repeat with the leftover skewers.
  • If you are using your BBQ, turn the skewers every 3-4 minutes to ensure even cooking on each side of the skewer.

6. Serve:

  • Arrange the cooked chicken skewers on a platter.
  • Garnish with freshly chopped basil or oregano and lemon wedges if desired.
  • Serve your Greek Chicken Skewers with a Greek salad and Mediterranean inspired rice. Enjoy!

Can I use dried herbs instead of fresh?

Yes, dried herbs work just as well as fresh. Replace your fresh herbs with 2 tsp of dried.

I don’t have a grill or BBQ, can I bake them instead?

Yes you can! Place your skewers on a parchment lined baking sheet and bake in the oven at 425 degrees F for 20 minutes.
