Savory Herb Infused Rice

Enjoy this savory and aromatic Herb Infused Rice recipe that pairs wonderfully with fish or chicken.

Ingredients:

  • 1 cup long-grain white rice
  • 2 cups gluten free chicken or vegetable broth
  • 2 tablespoons butter or olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup diced carrots
  • 1/2 cup diced bell peppers (any color)
  • 1/2 cup frozen green peas
  • 2 teaspoons Italian seasoning blend
  • 1/3 cup parmesan cheese (omit for a dairy free, vegan version)
  • Salt and black pepper to taste
  • Chopped fresh parsley for garnish (optional)

Instructions:

  1. Cook the Rice: Cook the long-grain white rice according to package instructions using gluten free chicken broth or vegetable broth instead of water. Once cooked, fluff it with a fork and set it aside.
  2. Sauté the Aromatics and Vegetables: In a large skillet or frying pan, heat the butter or olive oil over medium heat. Add the chopped onion and sauté for about 2-3 minutes until it becomes translucent. Add the minced garlic, diced carrots, and diced bell peppers. Sauté for another 5-7 minutes until the vegetables begin to soften. Ensure you are moving the vegetables around the pan frequently.
  3. Add the Herbs: Stir in the dried Italian seasoning blend. Continue to sauté for an additional minute to release the aroma of the herbs.
  4. Combine with Cooked Rice: Add the cooked rice to the skillet with the sautéed vegetables and herbs. Mix well to combine all the ingredients evenly.
  5. Add Parmesan Cheese and Season: Gently stir in the parmesan cheese (omit for a dairy free, vegan version). Season the rice with salt and black pepper.
  6. Serve: Transfer the herb infused rice to a serving dish. Garnish with chopped fresh parsley if desired. Enjoy!
