Lemon Dill Chicken

Ingredients:

For the Chicken Skewers:

  • 3-4 boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1/2 cup fresh basil, chopped finely
  • 3 cloves of garlic, minced
  • 1 teaspoon dried dill weed
  • 1/2 tsp red pepper flakes
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup Hellman’s mayonaise
  • 1/8 cup lemon juice
  • 1 teaspoon olive oil

Instructions:

1. Marinate the Chicken:

  • In a bowl, combine the mayonaise, lemon juice, minced garlic, dill weed, basil, red pepper flakes, salt, and black pepper.
  • Add the chicken cubes to the marinade, making sure they are evenly coated in the marinade.
  • Cover and refrigerate for at least 2 hours, or overnight for best results.

2. Heat the Olive Oil in a Pan:

  • Add olive oil to a Wok or large frying pan. Heat the oil over medium heat.

3. Cook:

  • Add the marinated chicken and liquid in the bowl to the pan. Cook over medium heat, stirring every few minutes, until the chicken is cooked through, and there is no longer liquid in the pan. This will take approximately 15-20 minutes.

6. Serve:
